🔥 Ingredients

For the Chicken

  • 400 g chicken breast, cut into strips or chunks

  • 3 tbsp pickle juice

  • 1 tsp smoked paprika

  • 1 tsp cayenne pepper (adjust to heat level)

  • ½ tsp garlic powder

  • Salt & black pepper, to taste

Coating

  • 150 g all-purpose flour

  • 2 tbsp cornstarch

  • 1 tbsp steak seasoning (with smoked paprika & rosemary)

For Air Frying

  • 1–2 tbsp neutral oil (for brushing or spraying)


🌶️ Nashville Hot Glaze

  • 2 tbsp neutral oil

  • 1½ tbsp brown sugar

  • 1 tsp cayenne pepper

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • Pinch of salt


🍳 Instructions

1. Marinate (Spicy Pickle Brine)

Mix the chicken with pickle juice, smoked paprika, cayenne, garlic powder, salt, and pepper.
Let marinate for 30–60 minutes to lock in that tangy, spicy flavor.


2. Coat the Chicken

In a bowl, combine flour, cornstarch, and steak seasoning.

Remove the chicken from the marinade — keep it wet.
Dredge firmly in the flour mixture, pressing the coating on so it sticks well.


3. Air Fry 🔥

Preheat the air fryer to 190°C / 375°F.

Lightly brush or spray the chicken with oil on all sides.
Arrange in a single layer (don’t overcrowd).

Air fry for 10–12 minutes, flipping halfway, until:

  • Golden and crispy

  • Cooked through

  • Crunchy on the outside, juicy inside


4. Make the Nashville Hot Glaze

In a small pan, gently heat:

  • Oil

  • Brown sugar

  • Cayenne

  • Smoked paprika

  • Garlic powder

  • Salt

Stir until melted, glossy, and deep red.
Keep the heat low — warm, not boiling.


5. Finish 🔥

Brush the hot glaze over the chicken immediately after air frying.
