This recipe keeps the chicken clean and neutral with a basic water-and-flour batter, then finishes strong with a glossy, fiery glaze that clings perfectly to every crispy bite.
🔥 Ingredients
For the Chicken
500 g (about 1 lb) chicken breast or thigh, cut into bite-size pieces
Salt & black pepper, to taste
150 g (about 1 cup) all-purpose flour
~100 ml cold water (adjust as needed)
Oil for deep frying (sunflower or canola oil)
For the Buldak-Honey Glaze
2–3 tbsp Buldak hot sauce (adjust to your spice tolerance — or go all in)
1½ tbsp honey
1 tsp garlic powder
1 tsp soy sauce (optional, for extra umami)
1 tbsp water (to loosen the glaze if needed)
1 tsp white sesame seeds
1 tsp black sesame seeds
🍳 Instructions
1. Prep & Fry the Chicken
Season the chicken pieces generously with salt and black pepper.
In a bowl, whisk together the flour and cold water until you get a thick, smooth batter — similar to pancake batter, but slightly thicker. It should cling well to the chicken without dripping off too fast.
Add the chicken to the batter and toss until evenly coated.
Heat oil in a deep pan or fryer to 170°C / 340°F.
Fry the chicken in batches (don’t overcrowd) for 5–6 minutes per batch, until golden brown and crispy.
Remove and drain on paper towels.
2. Make the Glaze
In a small saucepan, combine:
Buldak sauce
Honey
Garlic powder
Soy sauce (if using)
Heat over medium heat for 1–2 minutes, stirring gently until glossy and smooth.
If the glaze is too thick, add 1 tbsp water to loosen it slightly.
Remove from heat and stir in the white and black sesame seeds.
3. Coat the Chicken
Add the hot, freshly fried chicken to a bowl or pan.
Pour the warm glaze over the chicken and toss quickly until every piece is evenly coated and shiny.
Serve immediately.
